I have a bit of trouble understanding love in some of ghiblis movies. In spirited away and in ponyo, is Chihiro and Haku in love or do they just love each other? Also is ponyo and soskei in love or just love?

Personally I think it's just love between both 'couples' In Ponyo they're too young to love each other like that, though it would be fairly safe to assume that it might develop into 'in love' at some point. When you're a little kid though romantic love doesn't really occur to you, not in the same way.
As far as Chihiro and Haku are concerned I don't think it's romantic love because they have a more brother-sister relationship. He protects her and in exchange she puts her trust in him, though she may love him as a friend I don't see it as romantic love. Just my opinion anyway!
Couples like Howl and Sophie, Ashitaka and San or Pazu and Sheeta are more the romantic kind of couples.

I believe the relationship between Haku and Chihiro is romantic. It's early, of course; they won't be checking into a motel soon. Nonetheless, Chihiro and Haku are identical to Sophie and Howl. The only difference is that the latter two are legal.
Ponyo Sousuke is a brother-sister replationship. Even if it weren't so as of the close of the movie, Ponyo will be living with Sousuke as his sister for the next 13 years or so. After a thousand arguments over use of the bath, the phone, who gets the bigger bedroom, etc, any chance of romance will wither away.

Romance is a 'now' thing. The practical aspects, such as how to vacuum dragon scales out of the living room carpet are seldom considered.

IMO the thing between Chihiro and Haku is closer to "affection" than "love" per se. At the very least, Haku may see Chihiro in the romantic sense, but definitely not Chihiro. I mean, the way I see it, Chihiro owes her life to Haku and she's grateful for that, and sees him as a BFF, but that's it.
Ponyo and Sousuke, more of a "like" than love. But eh, it's based on The Litle Mermaid, and the couple in that story are in a romantic relationship, sooo... kinda confusing on that one.

The story parallels between the Haku/Howl and Chihiro/Sophie scream romance. Chihiro's BFF would be Lin. As for their ages, both Chihiro and Haku, as an average age of the genders, are capable of developing romantic feelings for each other. Girls mature a little faster than boys.
I agree that the Ponyo/Sousuke arrangement is confusing at best. I don't think Miyazaki gave their real situations enough thought.

True but I dunno... kinda hard to fall in love so deep after only a few days. Last I calculated, she was only in the spirit world for three days.
And Sousuke is only five, doubt he even knows what love feels like. Just a thought
*shrug*
